Ingredients
- 4 eggs
- 2 cups flour
- 2 cups sugar
- 1 1/2 cup oil
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2-3 tsp. cinnamon
- 1 tsp. salt
- 3 cups raw grated carrots
- 1/2 cup chopped nuts
Directions
- Mix dry ingredients
- Beat eggs and oil together
- Mix all ingredients, adding carrots and nuts last
- Pour into 3 greased 9 inch layer pans
- Bake at 300F for 45 minutes or 350F for 25-30 minutes
Frosting Ingredients
- 1 box of confectioners sugar
- 1 stick of margarine
- 8 oz. package of cream cheese
- 1 tsp. lemon extract

- Mix ingredients together
