Ingredients
- 3 large apples
- 2 tbsp. of lemon juice
- 5 tbsp. sugar
- 2 tsp. cinnamon
- 3 cups flour
- 1 tbsp. baking powder
- 1 tsp. salt
- 1 cup oil
- 2 cups sugar (separate from first sugar)
- 4 eggs
- 1/4 cups apple juice or milk
- 2 1/2 tbsp. vanilla
Directions
- Peel and slice apples thin
- Add lemon juice to prevent browning
- Mix the 5 tbsp. of sugar and 2 tsp. of cinnamon in bowl and set aside
- Mix 3 cups of flour, 1 tbsp. of baking powder, and 1 tsp. of salt in bowl and set aside
- Mix 1 cup of oil and 2 cups of sugar in separate bowl for 2-5 minutes or until creamy
- In another bowl, beat eggs till light and add 1/4 cup apple juice or milk. Add vanilla
- Mix egg/juice/vanilla bowl and add to oil/sugar mixture
- Add dry ingredients to liquids and fold together gently
- Pour 1/3 of batter in greased floured pan
- Add 1/2 of apples and 1/3 of the sugar/cinnamon mix and then mix together
- Add 1/3 more batter and other 1/2 apples and 1/3 more sugar/cinnamon mix
- Add any remaining batter and sugar/cinnamon mix
- Add to pan of your choice and bake at 350F
- Bundt pan for 50-60 minutes
- 2x 8" cake pans for 30-35 minutes
- 9" spring form for 60-70 minutes
- 2 loaf pans for 40-50 minutes
- Check for doneness by finger depression or toothpick insertion
- Let cool for 10 minutes in pan then remove
